Hello!  My name is Kathleen Law and I am a registered dietitian nutritionist.  I am a graduate of Saint Elizabeth University, May 2024, with a Master of Science, Nutritional Sciences, degree with High Academic Honors.  I also completed my dietetic internship in May 2024.  In May 2022, I graduated from Rutgers University with a Bachelor of Science, Nutritional Sciences, degree - Dietetics option, Summa Cum Laude. 

 

In the future, I hope to help people have access to fresh, local produce that is affordable and sustainable.  I want to teach people how to easily prepare delicious meals and increase their consumption of fruits, vegetables, whole intact grains, legumes, nuts, seeds, and mushrooms.  I hope to educate the young, the families, the older adults, and everyone in-between, of the importance of eating a well-balanced, plant-predominant diet.  I want to create cookbooks and online content that show everyone how it can be fun, simple, and tasty to eat well!

About a decade ago, I took the Nutrition 101 course at my local community college out of curiosity and was given an assignment to research the types of diseases seen in both sides of my family; I called it my "Family Tree of Disease" and it was not pretty!  I did not think these chronic diseases, such as heart disease, type II diabetes, and high blood pressure, had to be my future.  This project brought up so many questions for me and sent me on my quest for answers!

I continued to seek information at that community college, as I earned a Nutrition Certificate, a Personal Training Certificate, and my Associate of Science degree.  During this time, I also earned a Plant-Based Nutrition Certificate from the T. Colin Campbell Center for Nutrition Studies through eCornell.  After graduating Ocean County College, I began working toward my Bachelor of Nutritional Sciences at Rutgers University.  While studying at Rutgers, I completed the National Academy of Sports Nutrition (NASM) Personal Training Certification and started a 200 hour yoga teacher training program.  I wrapped up my time at Rutgers being awarded a Scholarship Award from Kappa Omicron Nu, the Human Sciences Honor Society, as well as the Ann S. McChesney Nutritional Sciences Excellence in Education Award, awarded to me by the Rutgers Nutritional Sciences Department.  I continued learning and gaining new experiences as I worked my way through the combined Master of Science and Dietetic Internship (MSDI) program at SEU.  During my final semester at Saint Elizabeth University, I was nominated for the Academy of Nutrition and Dietetics' Outstanding Dietetic Student Award.  I was selected as the 2024 winner in New Jersey and accepted my award at the NJAND meeting in the April 2024, at Rutgers University.
