Welcome to befittwell

Hello!  I am Kathleen, a registered dietitian nutritionist, personal trainer, and yogi from New Jersey.  

 

I have two degrees in nutritional sciences, two nutrition certifications, including the Plant Based Nutrition Certificate from eCornell and the T. Colin Campbell Center for Nutrition Studies, and two personal training certifications, including one from the National Academy of Sports Medicine (NASM).  I graduated from Rutgers University in New Brunswick in May 2022 with my Bachelor of Science, Nutritional Sciences, Dietetics option, Summa Cum Laude.  In May 2024, I graduated from Saint Elizabeth University (SEU) with my Master of Science, Nutritional Sciences, with High Academic Honors and having completed my dietetic internship.

While working on my master's at SEU, I began volunteering at the Keyport Senior Center.  Since autumn 2022, I have presented over 14 nutrition talks, speaking on topics including: Nutrition for Older Adults; Nutrition and Chronic Disease; Nutrition and Heart Disease; Nutrition and Diabetes; Nutrition and Cancer; and meal planning, shopping on a budget & reading nutrition fact labels; and have held three plant-based cooking demos.

I previously volunteered for the Rutgers Sports Nutrition Department for more than one year.  Prior to graduating Rutgers, I worked with Rutgers H.O.P.E. (Health Outreach, Promotion & Education) through Rutgers Student Health as a Peer Educator, Nutrition Advocate, and as a research assistant on the New Brunswick Community Farmers Market Education Program at Rutgers University. 

 

Between graduating Rutgers and beginning the combined master of science and dietetic internship (MSDI) at SEU, I worked in community nutrition as a Nutrition Educator at the Mae J. Strong Child Development Center in New Brunswick, New Jersey. 

 

I am currently working on a 200-hour yoga teacher training certification.

Befittwell is a space for all things food & nutrition, fitness & strength, mindfulness and holistic wellness.  

​

It is my mission to help people improve their lives holistically, as in, their whole self.

​
